How paneer yield works
Paneer keeps most of the fat and the casein protein from the milk, along with moisture (usually 50–55%). The lactose, whey proteins and most of the water leave as whey. So the more total solids (FAT + SNF) the milk has, the more paneer you get — which is why richer buffalo milk yields more than cow milk.
